
i love alliteration. i also love preparing cauliflower this way! i've admittedly never really eaten cauliflower much and would always begrudgingly eat any that would appear in a dish. it never tasted like anything, so like the equally flavorless (albeit crunchier) jicama, i never saw the point in buying it for myself. then, somewhere down the road, i happened to have them this way at a dinner outing, and i didn't think about it again until i saw them at the market the other day.
i roasted them like i would any other hearty vegetable...
- 1 head cauliflower cut into bite size pieces
- drizzle of olive oil to coat
- 2 tsp curry powder
- 1 tsp ground cumin
- generous sprinkling of salt
- black pepper
- red pepper flakes (only if you like spicy!)
preheat oven to 450°. toss everything together until the cauliflower is coated evenly (more or less), spread in a baking sheet and bake for 25 min or until cauliflower is golden brown around the edges. i expected them to be crispier, but the taste was still awesome! cauliflower is like a blank canvas, and absorbs flavors really well. the bland white cousin of broccoli is transformed into a savory and flavorful appetizer, side dish, or even an entrĂ©e!

This is my favorite way of eating cauliflower! The curry powder just does something magical to it, don't you think? Next time, I'll take your advice and throw in a little cumin too =)

thanks guys! i went from never eating cauliflower to now craving it at least once a week... i already ran out of cumin and red pepper flakes and probably should get more curry powder too!
